This avocado spread recipe sounds unusual I know and I only ever really got to know and love Avocados when I moved to South Africa from the UK in 1999 (that's so long ago now) but they are a staple food in my kitchen.
Full of healthy fats and potassium and just such creamy goodness.
This recipe is so simple but the combination of boiled eggs and avocado is something magical.

WHAT YOU NEED:

Boil the eggs (put in warm water and cook 5 and a half minutes after the water has boiled, then pour cold water in the pot and cool). Once cooled peel, chop into cubes and put in a bowl.
Press the garlic, and add to the eggs.
Half the avocado, remove the stone and cut the flesh into cubes. Place the avocado and coriander in the bowl.
Drizzle with lemon juice and olive oil.
Season everything with salt and pepper, and gently mix. Garnish with more coriander.
Serve immediately on gluten-free or wholewheat bread or some delicious rye or do without the bread if you are reducing carbs.
